Our ingredients are 100% organic, and sourced from local farmers, wherever possible. We appreciate to hear from local farmer and gardeners interested in selling to us. Our cuisine is vegan, compared to meats which require up to 23 times as much water to produce per pound.

We use cloth napkins and silverware for dine-in customers and provide compostable containers, cups, flatware, and bags made of corn for our take-out customers. Some of furnishings and fixtures are antiques or purchased pre-owned.

We used Benajmin Moore Aura Wall Paint, the most environmentally friendly paint on the market. Our color laser jet printer, the Kyocera ECO 170, is the most environmentally friendly printer on the market. We provide wall space for local artists to exhibit their creations.

Approximately 90% of our waste is recycled — 1/2 as clean organic fruit and vegetable pulp, which we give to anyone who asks for it, and the other 1/2 as recyclable plastics, glass and metals.
